It took me a while to get used to the different kinds of vegetables in Delhi. I mean really, how many types of gourds are there? I have though, come to really like the Desi or red carrots while they are in season. Compared to the hybrid carrots, which can be found all year long, Desi carrots have a deeper orange color and are much sweeter in taste. Delicious roasted or sautéed, I recommend butter sautéed and made into puree.The sweetness of this carrot is the highlight of the popular Punjabi dessert Gajar Ka Halwa (Carrot and Cardamon pudding) which can be a nice, very sweet way to load up on Vitamin A.
